Cheater Curry

Sautee in oil.



Add sauce and bring to simmer.
Add pressed, cubed tofu.



Add halved grape tomatoes. Simmer 15 minutes.

Add spinach, simmer 5 minutes.




Yum!



Serve over brown rice.

I have a ton of cookbooks but when it comes down to it, a meal like the cheater curry is my kind of a meal. I have not had spinach with curry but will try it, looks really good :)
